Like most people, we have a drawer full of cheap paring knives that are great, but it’s the handmade ones you form a relationship with, putting them on your knife rack, not in the drawer.

The handle on this knife is River Matai. The timber has turned very dark after sitting in a stream for many years. Normally Matai is the colour of Gingernuts.

The steel is Nitro V heat treated to 62HRC hardness.

Hard enough for excellent edge retention while still able to be maintained with a Honing Steel.
