Small multi purpose chef’s knife.

Small to medium knives are really freindly to use and will do 90% of jobs a big knife will do with less stress all round.

Deeper blades allow the user to operate anywhere on the chopping board with out the fingers contacting the surface.

Deeper blades are perfect for rocking cuts with a slightly more curved cutting edge than the narrow blades. The broader blade also facilitates scooping up the garlic, herbs etc, with the blade.

Many people exist quite happily with a deep or narrow bladed knife as their favourite, it’s all personal.

The timber on the handle is Puriri with a brass ferrule (where the blade meets the handle) .

This is a hidden Tang knife construction.

The steel is Nitro V hardened at 59/60 HRC giving very good edge retention but still allowing a Honing Steel to be used for edge maintenance.
